The production process


Today’s works are the result of a constant renewal mirroring the radical transformation of the whole oil-production sector, where the ancient oil mills which today are a mere token of the past have been replaced by modern equipment for the mechanical pressing of olives according to the "cold pressing" method.

Tradition is complemented by avant-garde technology managing and regulating the various processing stages: from the place where the oil is stored to the bottling lines.

Each production process was designed to prevent the altering of the molecular structure of the oil and fully complying with the ancient production method.

At Isnardi, in the past quality checks used to be entrusted only to the experience and very fine taste of the "Tasting Masters", whose assessment is still vital and highly valued, but today it is complemented by state-of-the-art analytical equipment ensuring the selection of the best raw material and the integrity and preservation of all the natural features of the end product. The olive tree and its fruits are -as it has always been- the starting point.
